Filled with loads of delicious veg and topped with oozing, golden slices of haloumi cheese, my Mexican Halloumi and Veg Bake is absolutely bursting with flavour!

This dish is all about minimal fuss for maximum pay off and makes a perfect mid-week meal that can be served with warmed tortillas or pita bread, steamed rice, or a fresh green salad.

Ingredients

  • 1 tbsp The Spice People’s Mexican Tex Mex
  • 2 whole eggplants, cut into 2cm cubes
  • 3 zucchinis, sliced in 2cm rounds
  • 3 clove garlic, crushed
  • 2 400g tins crushed tomatoes
  • 1 red pepper, thinly sliced
  • 1 yellow pepper, thinly sliced
  • 1 red onion, thinly sliced
  • olive oil
  • salt
  • 1 block halloumi, cut into 1cm slices

  • 2 block halloumi, cut into 1cm slices

Method

  1. Preheat your oven to 200c/180c fan-forced. Place a heavy-based wide casserole pan on medium heat. Add a good glug of olive oil and when hot, add in your onion slices with a pinch of salt. Sauté until soft for about 2 minutes. Add in your garlic and Tex Mex seasoning and sauté for a further minute until fragrant.
  2. Add in your veggies and tinned tomatoes and toss through. Place in the oven for 30-40 minutes, or until the veggies are nice and soft and everything has reduced down.
  3. Remove from the oven and place your halloumi slices on top in a single layer with a drizzle of olive oil and place under the grill for a further 5 minutes, or until the cheese is nice and golden. Serve alongside some tortillas, brown rice, or a fresh green salad and enjoy!
