Eggs Shakshuka Recipe

Ingredients

Method

  • Heat olive oil in a pan over a high heat. Add in your whole garlic cloves, sliced red onion, star anise, cinnamon, habanero chilli and rosemary
  • Stir and infuse your aromats in the hot oil until their perfume is released
  • Add in your chopped up sausages and render the fat out into the oil
  • Add a pinch of ground cumin, a teaspoon of brown sugar and a splash of red wine vinegar
  • Continue stirring whilst adding in tinned tomatoes and chicken stock
  • Simmer on the stove top for around 5 minutes or until slow bubbles form
  • Make 6 small divots in the mixture and crack your eggs in
  • Bake in the oven for around 7-10 mins or until the white of the eggs has set
  • Sprinkle over some crunchy dukkah for a zesty lemon myrtle freshness and crunchy finish
