The Spice People and My Market Kitchen Pork Scotch with Fennel Salad

Fennel and pork are a match made in heaven and offset each other perfectly. With the addition of Whole Fennel Seeds in this salad it echos the floral aniseed flavour in the fresh fennel which is then complimented by the sweet flavour of the nashi pear. This fresh flavor-packed salad marries perfectly with the smokiness of the chard pork scotch making this an ideal mid-week meal for your family.
- Pork Scotch Steaks
- 1 whole fennel
- 1 whole nashi pear
- 1 tbsp The Spice People Fennel Seeds Whole
- Extra virgin olive oil
- Lemon
- Salt
- pepper
- Slice the fennel and nashi pear into thin ribbons
- Grind the fennel seeds in a mortar and pestle adding in olive oil, lemon juice and salt & pepper
- Toss the pear and fennel ribbons in the olive oil dressing and set aside
- Cook scotch steaks for a few minutes on each side depending on the size of your steaks
- Allow the meat to rest before serving with your zesty side salad
