Mace is the outer membrane of the nutmeg seed and has a milder flavour than Nutmeg, making it ideal to use in shellfish and seafood. Our product has been dried and finely ground and it has a warm, sweet and spicy flavour with a reddish-orange colour. It is commonly used in Indian, Asian and European cuisines.
Middle Eastern Za’atar is a delicious Middle Eastern spice blend made with sumac, thyme, oregano and sesame seeds. This mixture has a nutty and fresh flavour and aroma and is traditionally used to sprinkle over flatbread that has been brushed with olive oil and lightly toasted. In Australian cuisine, it works well as a Barbecue rub. There are many variations of Za’atar and it is widely used in the Middle East and the Mediterranean in a similar way to how Mixed Herbs are used in European dishes.

The Maruga Scorpion Chilli is a variety of the Capsicum Chinese species, which is the bonnet family of peppers. The Maruga Scorpion also referred to as the Trinidad Scorpion, strongly resembles the habanero and the Scotch Bonnet—but the Scorpion has both of these peppers beat with its extreme heat!

Marjoram is a small, sweet, and aromatic herb that belongs to the oregano and mint family. Dried Marjoram Leaves are generally more pungent than their fresh counterparts with a savoury and grassy flavour subtler than oregano and milder than thyme. It is a prominent ingredient in Mediterranean cooking and blends such as bouquet garni, herbs de Provence, mixed herbs, and Za’atar.
