Pink peppercorns come from a Shinus species of tree and have a soft, sweet, fruity flavor much like the Juniper Berry. Native to both Peru and Brazil, pink peppercorns are best-used whole, not ground.

Ajwain seeds are also known as carom seeds or bishop’s weed and they’re a spice that’s been around for a long time. Ajwain seeds were pressed into ajwain oil, and were originally used in the Indian herbal medicine practice, Ayurveda. They were often used as a remedy for a lot of household illnesses, as well as for post-partum nursing mothers. Ajwain, or carom, was then co-opted into everyday cooking in order to enhance the nutritional and digestive benefits of dishes
The dried fruit is ridged and a dark green/khaki colour, which looks very similar to cumin (which is why it’s also referred to, sometimes, as Ethiopian cumin). Originally grown in West Asia, cultivation soon spread across the continent, mainly to India, and it’s now cultivated in most of the sub-continent, as well as parts of the Middle-East (Iran) and East Africa.

Australian Native Peppermint gum grows in the woodlands and forests of South Eastern Australia and has peppermint flavoured leaves which are glossy grey to grey-brown. The essential oils in the leaves smell like Peppermint and Eucalyptus gum and taste slightly minty. Use in sweet and savoury dishes for an aromatic minty kick.
White Kunzea is a fragrant tiny leaf with hints of eucalyptus and citrus. Kunzea comes from Tasmania’s beautiful East Coast and makes a wonderfully aromatic tea when brewed. It grows wild and abundant in Freycinet and towards the northeast. White Kunzea pairs well with native pepper berry and wattleseed.
Aniseed Myrtle is a rainforest tree growing in some areas of North Eastern NSW Australia. The leaves are crushed releasing an aniseed (or licorice) aroma. The flavoured leaves are often used for flavouring desserts, sweet sauces, and preserves. It’s also popular as a scented savoury sauce or marinade for meats and sets a deep fragrant flavour to salad dressings.
Australian Wild Basil is a unique herb adding strong-sweet savoury characteristics that can enhance regular dishes bringing a fascinating Australian twist to traditional uses of basil. Its aroma is a pleasant mix of basil, mint, and sage flavours it can be used in any dish where sweet basil would be used, complementing any Mediterranean tomato-based dish

The Trinidad Scorpion is a variety of the Capsicum Chinese species, which is the bonnet family of peppers. The Trinidad Scorpion strongly resembles the habanero and the Scotch Bonnet—but the Trinidad Scorpion has both of these peppers beat with its extreme heat! The only other pepper listed by the Guinness Book of World Records that beats the Trinidad Scorpion pepper is Carolina Reaper pepper. In the world of peppers, this hotness is measured based on the Scoville scale. The Trinidad Scorpion hottest chilies measure a whopping 1,500,00-2,009,231 SHU.

The ghost pepper, also known as bhut jolokia, is extremely hot.
The ghost pepper measures a whopping 1,041,427 SHU!
In the world of peppers, this hotness is measured based on the Scoville scale.
The more Scoville heat units (SHU) that pepper has, the spicier it is. For example, the bell pepper has zero SHU, while jalapeño and chipotle peppers measure 10,000 SHU each.
Himalayan Pink Salt is hand mined inside the Himalayan Mountains and is suitable for consumption in its natural state. Its colour varies over a spectrum from red to white, the most common being pink. Himalayan Pink salt is considered the purest salt available and is much healthier than common table salt as it contains 84 trace mineral components. Himalayan Pink Salt is known to have more health qualities than that of regular rock salt. It helps to improve hydration in the body by absorbing water at a more rapid rate and balances out the body’s blood sugar levels. It also helps to prevent and release muscle cramping. As well as in cooking, the salts can also be used in baths for a soothing muscle soak or as a body scrub and exfoliator.
This blend is made from our black, white sea salt flakes and Himalayan pink sea salt, they are used to flavour various recipes both savoury or sweet. Australian Sea salt and Himalayan salt is obtained using a more complex process than table salt, which includes evaporating the water. Due to this process sea salt contains trace minerals and nutrients that table salt does not have.
