Culinary Notes:

Bell Peppers most commonly come in red, green and yellow. Red bell peppers are simply ripened green peppers and therefore the sweetest of all the peppers. The taste of ripe peppers can also vary with growing conditions and post-harvest storage treatment; the sweetest fruits are allowed to ripen fully on the plant in full sunshine, while fruit harvested green and left to ripen in storage is less sweet. Green peppers are less sweet and slightly more bitter than yellow or orange peppers, with red bell peppers being the sweetest. By drying the sweet red peppers we can lock in the flavour at peak ripeness and thus providing a more concentrated flavour. Bell peppers sweet are commonly used in Asian, Italian and Mexican dishes.
