A delicious, hearty soup that’s packed full of flavour and nutrients. This one-pot wonder uses our Lebanese Baharat to add bags of flavour along with a few extra aromatics like chilli, mint, and lemon, with fresh tomatoes and chickpeas as flavour vehicles and blended until smooth and creamy.
This recipe yields 6 serves so can feed a sizeable family, and can also easily be frozen for a later date. A budget-friendly, healthy, family-pleaser ready in minutes.

Slow cooked lamb with Lebanese baharat spice – salt free
Method
- Place a heavy-based pot on medium heat with a good drizzle of olive oil. When hot, add in your onion and sauté until nice and soft – about 5 mins. Add your garlic, Baharat, and chilli and sauté until nice and fragrant – about 1 min.
- Add your tomatoes, mint leaves, and chickpeas to the spiced onion mixture and toss to coat. Pour your stock in, bring to the boil, then reduce to a simmer and cover with a lid. Leave on a low heat for 30 mins.
- When done, Scoop about 1/4 into a separate bowl and then blend your soup in a blender or with a stick blender until smooth and transfer back the rest of the soup back into the pot. Stir through your butter. Add lemon juice and salt and pepper to taste. Serve with fresh mint leaves on top and extra lemon or chilli if you like, and enjoy!
