Ethiopian Berbere – Hot
Product description
Ethiopian Berbere is an African spice blend made up of roasted herbs and spices. It has a full flavour which is characterised by its spicy aroma. It is used in Ethiopia and Eritrean cuisines. It is particularly used in the Ethiopian dish Berbere Chicken or just added to any dish to add a spicy, fragrant touch as well as a stunning warm red hue.

Method
Heat a large frying pan on the stove, add olive oil, and onions and saute 5min, then add garlic and zest or ginger and continue to saute for another 5 min till the onions start to caramelize. Add the Ethiopian berbere spice mix and saute further 2 min. lower heat to medium.
Add the chicken, and mix well to coat well with onion and spice mixture, Saute 5 min to give a nice browning, then add the tomato paste, yoghurt/ coconut milk (if using ) and chicken stock.
The addition, of yoghurt will soften the flavours and reduce the heat slightly.Add optional ingredients:
raisins/ currants/ cashews/ spinach leaves
Reduce heat to simmer and cook 10 min till chicken is cooked through.Serve with fresh coriander and rice .
