Fajitas are a big family-favourite in our house, which is great for me, because these Easy Chicken Fajitas are as easy to make as they are delicious. Our Mexican Burrito/Fajita Spice Mix is packed with all the spices you need for adding max Mexican flavour without the need for loads of different spices.
With just a few ingredients and very minimal effort, you can have a super tasty and very healthy dish on the table in minutes! Plus, all you need to do for serving is place the ingredients in the middle of the table and voila! A build-your-own dinner that’s fun for the kids.

Spices used in this recipe
Combine the Burrito/Fajita Spice Mix, olive oil and lime juice in a bowl and add the chicken, onion and capsicum, tossing to coat in the marinade.
Place a griddle pan on high heat and when its smoking hot add the chicken and pepper mix to the pan. Toss in the pan with tongs until the chicken is cooked through and the meat and veggies are nicely charred on the outside – about 5 mins.
Warm the tortillas in the microwave or oven and serve with the chicken and pepper mix. For a cooling accompaniment, serve with Greek yoghurt and some extra lime wedges.
