Combine your garlic, ginger, jerk seasoning, and lime for the eggplant part of the recipe in a bowl until you form a paste. Add the soy, coconut sugar, coconut oil, spring onions, and habanero chilli (if using) and stir to combine – taste to check for seasoning.
Slice eggplant vertically into half-inch-thick slices. Lay the slices out and brush both sides generously with the marinade.
Place a griddle pan on a med-high heat and brush the surface with oil to prevent the eggplant from sticking. When hot, add the eggplant and grill on both sides for about 3-5 mins or until golden brown. While they grill, combine the ingredients for the sauce in a bowl.
