Using fresh, new-season summer mangoes, my Mango Goats Cheese Salad is the perfect combination of sweet, fresh, salty and creamy. This unusual combination with a finishing touch of Native White Kunzea and Wild Thyme is the perfect summer side salad addition to your Christmas table.

Ingredients

  • 2 mangoes – peeled and diced
  • 2 heads of cos lettuce
  • 150g goats cheese
  • 1/2 tsp The Spice People Australian Native Wild thyme
  • 1/2 tsp The Spice People Australian Native White Kunzea
  • 1/2 tsp The Spice People Australian Native River Mint
  • ¼ cup olive oil
  • 1tbsp balsamic vinegar
  • 4 mangoes – peeled and diced
  • 4 heads of cos lettuce
  • 300g goats cheese
  • 1 tsp The Spice People Australian Native Wild thyme
  • 1 tsp The Spice People Australian Native White Kunzea
  • 1 tsp The Spice People Australian Native River Mint
  • 1/2 cup olive oil
  • 2 tbsp balsamic vinegar

Method

  1. Place the lettuce leaves on a large serving platter and top with the mango pieces and goats cheese. Combine the olive oil, vinegar, and white kunzea, wild thyme and river mint in a cup and whisk together before drizzling over the salad in an even layer. Serve and enjoy!
