Mexican Tex Mex – Mild
A perfect blend for those who like it spicy. This versatile blend of chilli powder, sweet paprika, cumin, oregano, garlic, onion, and salt is great for taco seasoning or in chilli con carne. It also makes a great base for dishes such as Hungarian goulash, stews and soups. This spicy blend gives a Tex Mex aroma and flavour to many dishes.$3.45
Preheat your oven to 200c/180c fan-forced.
Place a heavy-based wide casserole pan on medium heat. Add a good glug of olive oil and when hot, add in your onion slices with a pinch of salt. Saute until soft for about 2 minutes.
Add in your garlic and tex mex seasoning and saute for a further minute until fragrant.
Add in your veggies and tinned tomatoes and toss through. Place in the oven for 30-40 minutes, or until the veggies are nice and soft and everything has reduced down.
Remove from the oven and place your halloumi slices on top in a single layer with a drizzle of olive oil and place under the grill for a further 5 minutes, or until the cheese is nice and golden.
Serve alongside some tortillas, brown rice, or a fresh green salad and enjoy!
