Native-Spiced BBQ Kangaroo with Chips

This recipe is the ultimate Aussie BBQ dish (with a few added extras). For the BBQ spice rub, i’ve done a combination of some of our Native herbs and spices as well as a few classic staples like cumin and paprika. It may seem like there are a few ingredients going into the rub, but each ingredient brings a super fragrant, unique flavour that all work so well together. Plus, all of these herbs and spices come in handy snap-seal packaging so can be stored for a long time to come so you can make this again and again, plus try your hand at some of our many Native recipes!

Serve this Aussie steak and chips take with a fresh green salad or zesty slaw.

    Australian Native White Kunzea

Method

  1. Heat a barbecue to medium-high.

    To make the spice mix, combine all the ingredients together in a pestle and mortar, mixing until well combined.  Leftover spice mix can be stored in a container  in the cupboard.

  2. Rub kangaroo steaks with olive oil and rub with 1tbspn of spice mix, place on a plate covered with plastic wrap and allow to marinate for 30 minutes.

  3. Meanwhile for the chips, coat them in olive oil and plenty of salt and pepper and lay out in a single layer on a lined baking sheet. Place in a preheated 220 degree oven and cook for 25-30 mins or until golden outside and cooked inside.

  4. One they’re done marinating, place the steaks on the barbecue grill and cook for 3-4 minutes on either side depending on the thickness, for medium rare. Remove and place on a plate allowing to rest. Serve with chips and enjoy!
