Ingredients
FOR CHICKEN
- 2 tbsps The Spice People’s Australian Native BBQ Seasoning
- 4 kg free-range whole chicken
- olive oil
FOR STUFFING
- 1/2 cup macadamia nuts, roughly chopped or almonds
- 1 tbsp Olive oil
- 2 leeks, thinly sliced
- 2 tbsp butter or margarine
- Salt and pepper to season
- 1 tsp The Spice People’s White Kunzea
- 1 tsp The Spice People’s Native Thyme
- 8 slices white bread soaked in milk – day or two-old bread is the best = approx 1 cup bread crumbs
- 2 cloves of fresh garlic chopped
- 1/2 cup dried apricots, roughy chopped
- 80g crispy fried bacon bits – optional
