This recipe is a take on a traditional Mexican Adobo marinade using orange juice and our authentic Mexican Adobo Seasoning.

I marinate the prawns briefly then place them on the BBQ until they’re nice and charred on the outside, and tender and just-cooked on the inside. Served with zesty lime mayo and your choice of side, this is the perfect addition to your next BBQ or dinner party!

Directions

  1. In a bowl, combine the Adobo seasoning, a good glug of olive oil, and the juice of your orange and stir to combine. Add in your prawns and toss to coat in the marinade – set aside for about 10 minutes to allow the marinade to begin to seep in.
  2. Turn your BBQ grill, or griddle pan, onto high. When hot, place your prawns on and grill for about 2-3 minutes on each side, until the outer crust is nice and charred, and the inside is opaque and cooked through. Remove and allow to rest for a couple of minutes.
  3. While the prawns rest, combine your mayo and lime and give a good mix. Serve your prawns with the lime mayo and enjoy!
