Inspired by the vibrant street markets of Egypt, this dish celebrates the art of simple ingredients elevated with spice. Our Egyptian Dukkah is a finely balanced blend of roasted nuts, seeds, and warming spices which brings irresistible crunch and aromatic depth to golden, crispy cauliflower.
The sweetness of slow-cooked jammy onions pairs beautifully with the nutty, savoury notes of the dukkah, creating a dish that’s both comforting and exotic. It’s a modern twist on a Middle Eastern classic, proof that a sprinkle of spice can transform humble vegetables into something extraordinary.

Directions
- Preheat oven to 200°C.
- Toss cauliflower florets with olive oil, salt, pepper, and 1 tbsp of dukkah.
- Spread onto a lined baking tray and roast for 25–30 minutes or until golden and crisp.
- Meanwhile, sauté onion in a small pan with a drizzle of oil, honey, celery salt and balsamic vinegar until soft, glossy, and caramelised.
- Plate the roasted cauliflower and spoon over the jammy onions.
- Sprinkle with the remaining dukkah and garnish with fresh herbs.
