Ingredients
180g or 1 chicken breast, butterflied
2 wholemeal burger buns
2 tbsp The Spice People Jerk Chicken Seasoning
1 tomato, sliced
2-4 slices of tinned pineapple
½ red onion slices
½ avocado, sliced
1 carrot, grated
Jerk BBQ Sauce
4 tbsp BBQ sauce
1 tsp The Spice People Jerk Chicken Seasoning
½ lime juice
Sprinkle of freshly chopped coriander
Directions
- Mix chicken breast with jerk seasoning and a drizzle of olive oil. Set aside to marinate.
- Combine BBQ sauce, extra jerk seasoning, lime juice and coriander to make the jerk BBQ sauce.
- Heat a grill pan or BBQ on medium-high. Cook chicken and pineapple slices 5-6 minutes per side until charred and cooked through.
- Layer with grated carrot, tomato, red onion, avocado, and grilled chicken.
- Drizzle with extra sauce, top with bun, and serve with salad or sweet potato fries.
