Juicy jerk-marinated chicken is grilled to perfection, then layered with crisp greens, fresh pineapple, and a cooling yoghurt sauce for balance. It’s quick to make, packed with protein, and just the right size for a relaxed weeknight dinner or a flavourful date-night meal. Directions

  1. Mix chicken breast with jerk seasoning and a drizzle of olive oil. Set aside to marinate.
  2. Combine BBQ sauce, extra jerk seasoning, lime juice and coriander to make the jerk BBQ sauce.
  3. Heat a grill pan or BBQ on medium-high. Cook chicken and pineapple slices 5-6 minutes per side until charred and cooked through.
  4. Layer with grated carrot, tomato, red onion, avocado, and grilled chicken.
  5. Drizzle with extra sauce, top with bun, and serve with salad or sweet potato fries.
