Ingredients

180g or 1 chicken breast, butterflied

2 wholemeal burger buns

2 tbsp The Spice People Jerk Chicken Seasoning

1 tomato, sliced

2-4 slices of tinned pineapple

½ red onion slices

½ avocado, sliced

1 carrot, grated

Jerk BBQ Sauce

4 tbsp BBQ sauce

1 tsp The Spice People Jerk Chicken Seasoning

½ lime juice

Sprinkle of freshly chopped coriander

Directions

  1. Mix chicken breast with jerk seasoning and a drizzle of olive oil. Set aside to marinate.
  2. Combine BBQ sauce, extra jerk seasoning, lime juice and coriander to make the jerk BBQ sauce.
  3. Heat a grill pan or BBQ on medium-high. Cook chicken and pineapple slices 5-6 minutes per side until charred and cooked through.
  4. Layer with grated carrot, tomato, red onion, avocado, and grilled chicken.
  5. Drizzle with extra sauce, top with bun, and serve with salad or sweet potato fries.
