A classic Easter treat with a uniquely Australian flavour boost from the Ground Wattleseed, lending them a nutty, coffee-like depth. Perfect with a cuppa on Easter morning.

Directions

  1. In a bowl, mix flour, yeast, sugar, salt, cinnamon and Ground Wattleseed.
  2. Add warm milk, butter, and egg; knead until dough is smooth.
  3. Fold in dried fruit. Place in a lightly greased bowl and cover. Let rise for 1 hour in a warm spot (oven with a light on is great).
  4. Punch down the dough and divide into 14 even pieces. Shape into buns, place on a lined baking tray, and let rise again for another 30 minutes.
  5. Mix flour and water for the cross, pipe onto buns.
  6. Bake at 180°C for 20-25 minutes.
  7. Brush hot cross buns with warm apricot jam for a sticky, glossy finish.
