Ingredients

  • 28 g The Spice People’s Indian Lamb Rogan Josh spice mix
  • 1/2 cup water
  • 1 kg lamb meat, diced
  • 2 tbsp white wine vinegar
  • 2 tbsp oil or ghee
  • 1 cup natural yoghurt
  • 2 onions, finely diced
  • 2 tsp grated ginger
  • 4 garlic cloves, crushed

Directions

  1. Heat oil/ghee in a saucepan, add garlic, ginger & onion. Sauté 5min. Mix vinegar with Indian Lamb Rogan Josh spice mix, add to onions, sauté further 5 min.
  2. Add lamb, brown well on a high heat to caramelise the flavour – 5 min. Add enough water to thicken sauce.
  3. Reduce heat and simmer for 1 -1.5 hrs. Adjust water as necessary to prevent drying out. Add yoghurt 5 min before serving. Garnish with coriander leaves and toasted almonds. Serve with naan or roti & rice.
