Using fresh, new-season summer mangoes, my Mango Goats Cheese Salad is the perfect combination of sweet, fresh, salty and creamy.

This unusual combination with a finishing touch of Native White Kunzea and Native Wild thyme is the perfect summer side salad addition to your Christmas table.

Directions

  1. Place the lettuce leaves on a large serving platter and top with the mango pieces and goats cheese. Combine the olive oil, vinegar, and white kunzea, wild thyme and river mint in a cup and whisk together before drizzling over the salad in an even layer. Serve and enjoy!
