Simple Mexican Prawn Fajitas

Ingredients

  • 1 tbsp The Spice People’s Mexican Burrito Spice Mix
  • 400g peeled raw prawns
  • 1 red pepper, thinly sliced
  • 1 yellow pepper, thinly sliced
  • 1 onion, thinly sliced
  • 2 tbsp olive oil
  • pinch of salt
  • 8 flour tortillas
  • 1 avocado
  • 1 lime
  • sour cream, for serving

Directions

  1. Place a pan on med-high heat with a drizzle of olive oil. When hot, add in your pepper and onion slices and sauté until super soft and slightly starting to char – about 4-5 mins. Remove and set aside in a bowl. While the veggies are frying, mash your avocado with a fork and add a pinch of salt and the juice of the lime. Set aside for serving.
  2. Place the pan back on the heat with another drizzle of oil and add in your prawns and cook until they turn pink and opaque – about 2-4 mins. Add in your burrito/fajita spice mix and toss through. Add your veggies in and toss everything together for 3 min. Remove from the pan and place on a plate for serving.
  3. To serve, warm your tortillas through and serve them alongside your prawn and veg mix, sour cream, and smashed avo, and enjoy!
