Simple Mexican Prawn Fajitas

Ingredients
- 1 tbsp The Spice People’s Mexican Burrito Spice Mix
- 400g peeled raw prawns
- 1 red pepper, thinly sliced
- 1 yellow pepper, thinly sliced
- 1 onion, thinly sliced
- 2 tbsp olive oil
- pinch of salt
- 8 flour tortillas
- 1 avocado
- 1 lime
- sour cream, for serving
Directions
- Place a pan on med-high heat with a drizzle of olive oil. When hot, add in your pepper and onion slices and sauté until super soft and slightly starting to char – about 4-5 mins. Remove and set aside in a bowl. While the veggies are frying, mash your avocado with a fork and add a pinch of salt and the juice of the lime. Set aside for serving.
- Place the pan back on the heat with another drizzle of oil and add in your prawns and cook until they turn pink and opaque – about 2-4 mins. Add in your burrito/fajita spice mix and toss through. Add your veggies in and toss everything together for 3 min. Remove from the pan and place on a plate for serving.
- To serve, warm your tortillas through and serve them alongside your prawn and veg mix, sour cream, and smashed avo, and enjoy!
