Stuffed Beef Roll with Piri Piri

Ingredients
1 large beef rump cap, trimmed and butterflied
1 onion, diced
2 cloves garlic, chopped
2 cups baby spinach
½ cup semi-dried tomatoes, chopped
4 slices of provolone cheese
1 tsp The Spice People Piri Piri Seasoning (for the filling)
1 tbsp The Spice People Piri Piri Seasoning (for the coating)
2 tbsp olive oil
Salt and pepper, to taste
Directions
- Preheat oven to 200°C.
- Sauté onion and garlic until fragrant, then add spinach, semi-dried tomatoes, and 1 tsp piri piri seasoning; cook until wilted.
- Spread the mixture over the butterflied beef and top with provolone cheese.
- Roll up tightly and secure with cooking twine.
- Rub the outside with olive oil and sprinkle with the remaining piri piri seasoning, salt, and pepper.
- Roast for 40 minutes or until cooked to your liking.
- Rest before slicing and serve with roasted veggies or salad.
