Stuffed Beef Roll with Piri Piri

Ingredients

1 large beef rump cap, trimmed and butterflied

1 onion, diced

2 cloves garlic, chopped

2 cups baby spinach

½ cup semi-dried tomatoes, chopped

4 slices of provolone cheese

1 tsp The Spice People Piri Piri Seasoning (for the filling)

1 tbsp The Spice People Piri Piri Seasoning (for the coating)

2 tbsp olive oil

Salt and pepper, to taste

Directions

  1. Preheat oven to 200°C.
  2. Sauté onion and garlic until fragrant, then add spinach, semi-dried tomatoes, and 1 tsp piri piri seasoning; cook until wilted.
  3. Spread the mixture over the butterflied beef and top with provolone cheese.
  4. Roll up tightly and secure with cooking twine.
  5. Rub the outside with olive oil and sprinkle with the remaining piri piri seasoning, salt, and pepper.
  6. Roast for 40 minutes or until cooked to your liking.
  7. Rest before slicing and serve with roasted veggies or salad.
