Apricot Bliss Balls

Ingredients
1000g dried apricots
2 cups rolled oats
200g crunchy peanut butter
2 tbsp Chia Seeds
120g each of pumpkin seeds, sunflower seeds, dried banana
120g The Spice People's Blue Poppy Seeds
120g maple syrup
pinch of salt
Directions
- Place half of the dried apricots along with the rolled oats, peanut butter, chia seeds and maple syrup into a food process and blend until you have a mix that is a similar size to breadcrumbs.
- Add the remaining ingredients and pulse on high until all the ingredients are incorporated and the nuts are roughly chopped.
- Make the mixture into balls using your hand, firmly pressing them together before placing them into an airtight container and storing in the fridge for up to a week.
