Black rice owes its striking black–purple hue to anthocyanins, powerful plant-based antioxidants also found in blueberries and blackberries. These naturally occurring compounds not only give the grain its deep colour but also contribute to its reputation as a nutrient-rich whole food.

With a rich, nutty flavour and pleasantly chewy texture, black rice is as versatile as it is distinctive. It works beautifully in nourishing breakfast porridges, vibrant grain salads, or as an elegant side to lighter meats, seafood, and roasted vegetables, bringing both visual impact and depth of flavour to the plate.

How to Cook Rice
Before Cooking
Rinse rice well under cold water until the water runs clear.
Use a large pot with a wide base so the rice has room to expand.
Avoid using a small pot for large quantities, as rice may cook unevenly.

Stovetop Method (Drain Method)
Best for fluffy, separate grains.

Add 1 cup of rice and 8–10 cups of cold water to a large saucepan.
Bring to a boil over high heat, stirring occasionally.
Reduce heat and simmer uncovered for 10–15 minutes, or until rice is tender.
Drain well in a colander.
Serve immediately.

Absorption Method
Best when you want all the water absorbed.

Add 1 cup of rice and 2½ cups of cold water to a saucepan.
Bring to a boil over medium-high heat, stirring occasionally.
Reduce heat to low, cover with a lid, and simmer for 10–15 minutes.
Turn off heat and let it sit, covered, for 3–5 minutes.
Fluff gently and serve.
Rice Cooker Method
Add rice and water to the rice cooker.
Use approximately 2½ cups of water for every 1 cup of rice.
(Check your rice cooker instructions, as ratios may vary slightly.)
Cook using the standard “white rice” setting.
Once finished, fluff and serve.
