Chicken herbs de provence soup

Ingredients

  • 2 tbsp butter or olive oil
  • 1 kg chicken thighs, diced
  • 1 tbsp The Spice People’s Herbs de Provence
  • 1 cup diced red onion or shallots
  • 2 cups diced carrots
  • 4 cups small whole peeled baby potatoes
  • 1 bunch asparagus chopped or green beans
  • 1 cup dry white wine
  • 1 cup farfalle or pasta of your choice
  • salt and pepper, to taste
  • parsley to garnish

Directions

  1. Heat a large pan and Brown chicken and onion in butter.
    Turn to a med low heat, add carrots, potatoes, add herbs de Provence and season with salt and pepper.
  2. Pour in the wine into the pan. Bring to the boil and reduce to simmer for 20min or until potatoes are cooked. Add asparagus/beans and cook a further 2 minutes.

    Serve in a bowl with juice, sprinkle with parsley serve with and a crusty bread.
