Chicken herbs de provence soup

Ingredients
- 2 tbsp butter or olive oil
- 1 kg chicken thighs, diced
- 1 tbsp The Spice People’s Herbs de Provence
- 1 cup diced red onion or shallots
- 2 cups diced carrots
- 4 cups small whole peeled baby potatoes
- 1 bunch asparagus chopped or green beans
- 1 cup dry white wine
- 1 cup farfalle or pasta of your choice
- salt and pepper, to taste
- parsley to garnish
Directions
- Heat a large pan and Brown chicken and onion in butter.
Turn to a med low heat, add carrots, potatoes, add herbs de Provence and season with salt and pepper. - Pour in the wine into the pan. Bring to the boil and reduce to simmer for 20min or until potatoes are cooked. Add asparagus/beans and cook a further 2 minutes.
Serve in a bowl with juice, sprinkle with parsley serve with and a crusty bread.
