A zesty, creamy slice that can be made in a flash with some pantry staples, infused with Australia’s native citrus flavours of Lemon Myrtle. The slice can be made ahead up and will keep in the fridge for up to 5 days.
Directions
- Process biscuits in a bowl of a food processor until fine crumbs form. Add desiccated coconut, lemon zest, and Lemon Myrtle
- Stir in melted butter and condensed milk until well combined.
- Press the mixture into a lined (7in x 11in) slice tray and refrigerate for 1 hour.
- Once the base is set, mix icing sugar, lemon juice and melted butter to make the icing. Spread over the slice, sprinkle with Lemon Myrtle powder and chill until set.
- Slice into 8 squares or 16 smaller rectangles and serve.
