Lemon Myrtle No-Bake Slice

A zesty, creamy slice that can be made in a flash with some pantry staples, infused with Australia’s native citrus flavours of Lemon Myrtle. The slice can be made ahead up and will keep in the fridge for up to 5 days.

Directions

  1. Process biscuits in a bowl of a food processor until fine crumbs form. Add desiccated coconut, lemon zest, and Lemon Myrtle
  2. Stir in melted butter and condensed milk until well combined.
  3. Press the mixture into a lined (7in x 11in) slice tray and refrigerate for 1 hour.
  4. Once the base is set, mix icing sugar, lemon juice and melted butter to make the icing. Spread over the slice, sprinkle with Lemon Myrtle powder and chill until set.
  5. Slice into 8 squares or 16 smaller rectangles and serve.
