Inspired by the sun-drenched flavours of the Eastern Mediterranean, these Sumac Koftes with Cool Tzatziki bring together spice, freshness, and conviviality. The smoky aroma of the koftes sizzling on the grill pairs beautifully with the tang of sumac and the creamy coolness of homemade tzatziki. Method:

  1. Combine lamb mince, Gyros Seasoning, Sumac, Oregano, garlic, onion, parsley, salt, and pepper in a bowl. Mix well and shape into 8 small koftes.
  2. Drizzle with olive oil and grill on a BBQ or pan over medium-high heat for 3-4 minutes per side, until browned and cooked through.
  3. For the salad, toss cabbage, red onion, lemon juice, olive oil, dill, salt, and pepper together.
  4. Serve koftes with the lemon-dill salad, a spoonful of tzatziki, pita, and extra lemon wedges. Sprinkle a little sumac over the top before serving.
