Sumac is an ancient spice made from the dried berries of the wild sumac shrub (Rhus coriaria), native to the Middle East and Mediterranean. Its name comes from the Aramaic word summaq, meaning “red,” a nod to its deep crimson hue.

Long before lemons were widely used in Europe, sumac was prized by the Romans and Greeks as a natural souring agent in cooking and medicine. Across the Levant, it became a cornerstone of everyday cuisine, adding bright, tangy acidity to dishes like fattoush, grilled meats, and za’atar blends.

Today, sumac remains a defining flavour of Middle Eastern cooking, valued for its vibrant citrus-like sharpness and its ability to lift dishes with effortless brightness.

Sumac crushed is made the traditional way in small batches to preserve its natural colour, brightness, and tangy flavour.

Ripe berries are harvested, naturally sun-dried, then gently crushed and sifted to remove the seed, leaving only the vibrant outer husk where the flavour lives.

The result is 100% pure sumac, bright, lemony, and naturally tart.

Sumac is a versatile finishing spice that adds a bright, lemony tang without the need for citrus or vinegar.

The simplest way to use it is to sprinkle it directly over dishes just before serving. It works beautifully on grilled meats like lamb, chicken, and beef, where it cuts through richness and adds freshness. It’s also a natural fit for roasted vegetables, especially eggplant, cauliflower, and potatoes.

In salads, sumac is often used generously, most famously in fattoush, where it lifts greens, tomatoes, and herbs with a sharp, citrus-like edge. It can also be mixed into marinades, rubs, or yoghurt-based sauces for extra depth.

For a quick flavour boost, combine sumac with olive oil and salt and drizzle over flatbreads or grains like rice and couscous. It also pairs well with other spices such as paprika, cumin, and oregano. Its perfect for finishing salads, grilled meats, and Middle Eastern dishes.
