Healthy One-Tray Greek Nachos

Ingredients
2 pita breads, cut into triangles
1 tbsp olive oil
1 chicken breast (about 180g)
1 tsp The Spice People Greek Gyros Seasoning
1 tsp The Spice People Oregano
1 tsp The Spice People Sumac
½ red onion, thinly sliced
1 cup cherry tomatoes, halved
½ cup pitted Kalamata olives
½ cup crumbled feta
2 tbsp tzatziki or Greek yoghurt
Fresh parsley, to garnish
Directions
- Preheat oven to 200°C. Toss pita triangles with olive oil and Gyros seasoning. Spread on a tray and bake for 8–10 minutes until crisp.
- Season chicken breast with Greek Gyros Seasoning and a drizzle of olive oil. Grill on the BBQ for 5–6 minutes per side until cooked through, then slice thinly.
- On a tray, layer toasted pita chips with sliced chicken, red onion, tomatoes, olives, and feta. Return to the oven for 2 minutes to warm through.
- Remove and top with homemade tzatziki, fresh parsley, and a final sprinkle of sumac. Serve immediately.
