Beef Burritos are little hot pockets of flavor that are a hit every single time I whip them up for dinner.

Filled with spiced juicy beef, oozing melted cheese, and creamy black beans, these make the most delicious, wholesome lunch or dinner that’s so quick and easy to do. I like to serve these with the lettuce and tomatoes to freshen things up, but you could do fresh coriander, corn smashed avo, sour cream, you name it!

Another great tip – make these ahead of time and instead of placing them in the pan after wrapping them in foil, place them in the fridge or freezer for use at a later date.

Directions

  1. Place a pan on medium heat. Add a drizzle of olive oil and when hot, Add in 1/2 of your diced onion and saute for a further 2-3 minutes until the onion softens. Add in your garlic, burrito seasoning saute for 2 min.
  2. Add in your beef mince and don’t disturb it – the juices will leech out of the meat and then evaporate to start the browning process, so avoid touching the mince until that has happened. When it does, stir the mince to brown all over. Don’t be afraid to cook till nearly all moisture has gone as this is when the rich caramelization will occur adding a greater depth of flavor.

    Add tomato paste and a good dash of water and stir. Leave to simmer and reduce for 15 minutes.
  3. Lay your tortillas out flat on a piece of foil each. Divide your beef mince, cheese, black beans, corn, rice, and remaining onion – fold each end in and roll into a tight burrito shape. Fix them in place by rolling them tightly into their foil packages.
  4. Place a clean, dry pan on medium heat and place your foil-wrapped burritos in to warm through – about 2 minutes on each side. Serve each burrito parcel with your shredded lettuce and chopped tomatoes and enjoy!
