Chai-Spiced Cottage Cheese Protein Cookies

Ingredients

225g Paris Creek Farm Quark

1 large egg

1 tsp vanilla extract

  ½ tsp The Spice People ground cinnamon

  ¼ tsp The Spice People ground cardamom

  ¼ tsp The Spice People ground ginger

⅛ tsp The Spice People ground nutmeg

⅛ tsp The Spice People ground allspice

Pinch The Spice People ground cloves

 ½ tsp baking powder

Pinch fine salt

125g almond meal*

50g dark chocolate chips

Directions

Preheat oven to 180°C. Line a baking tray with baking paper.

In a large bowl whisk cottage cheese, egg and vanilla until combined.

Add spices, baking powder and salt, mix to combine. Fold in the almond meal and chocolate chips until a firm batter forms.

Scoop heaped tablespoons onto the tray and gently flatten.

Bake for 12–14 minutes,until set around the edges but soft in the centre.

Cool briefly on tray, then transfer to a rack to cool completely.

Store in an airtight container in the fridge for up to a week.

 *Notes:
For a nut-free version swap out 125g of almond meal with 100g blended
rolled oats.
