Ethiopian Berbere Beef Mince Lettuce Cups

Ingredients
500g beef mince
1 red onion
2-3 tbsp The Spice People Ethiopian Berbere Spice Mix
3 tbsp soy sauce
1 tbsp brown sugar
1 tbsp worcestershire
1 Zucchini, sliced
Parsley
Chopped peanuts
Cos lettuce
Directions
- Finely dice the red onion and sauté in a large pan with a little oil over medium heat until softened. Add crushed garlic and cook for 1 minute.
- Add beef mince and cook, breaking it up, until browned. Stir through The Spice People Ethiopian Berbere Spice Mix, soy sauce, brown sugar and Worcestershire sauce.
- Slice zucchini and char on an open flame or on top of your gas cooker.
- Spoon the beef mixture into separated cos lettuce cups.
- Top with chopped parsley and crushed peanuts. Serve alongside the charred zucchini.
