Ethiopian Berbere Beef Mince Lettuce Cups

Ingredients

500g beef mince

1 red onion

2-3 tbsp The Spice People Ethiopian Berbere Spice Mix

3 tbsp soy sauce

1 tbsp brown sugar

1 tbsp worcestershire 

1 Zucchini, sliced

Parsley

Chopped peanuts

Cos lettuce

Directions

  1. Finely dice the red onion and sauté in a large pan with a little oil over medium heat until softened. Add crushed garlic and cook for 1 minute.
  2. Add beef mince and cook, breaking it up, until browned. Stir through The Spice People Ethiopian Berbere Spice Mix, soy sauce, brown sugar and Worcestershire sauce.
  3. Slice zucchini and char on an open flame or on top of your gas cooker. 
  4. Spoon the beef mixture into separated cos lettuce cups.
  5. Top with chopped parsley and crushed peanuts. Serve alongside the charred zucchini.
