Healthy Beef Tacos

Ingredients
- 2 tbsp The Spice People Mexican taco spice blend
- 500g lean beef mince or chicken/pork or lamb)
- 1 red onion diced
- 1 cup mushrooms sliced (optional)
- 2 cups lettuce shredded
- 1 tomato sliced
- 1 cup shredded cheese
- 1 avocado mashed with 2 tbsp sour cream, 1 tbsp lemon juice & salt and pepper to taste
- 12 hard-shell tacos
- 1 tbsp olive oil
Directions
- Heat oil in a saucepan, add onion and mushrooms, sauté 5 mins. Add the taco spice mixture and sauté for 2 mins. Add the meat and sauté for a further 15 mins until cooked and slightly caramelised.
- Assembly: While the meat is cooking, prepare the individual fillings -avocado, tomatoes, lettuce and cheese.
Prepare taco shells as per packet instructions and serve warm to allow assembly of the tacos.
