High-Protein Pumpkin Mac & Cheese with Creamy Butter Chicken & Spinach

Ingredients
900g Kent pumpkin, peeled and chopped roughly
Salt to taste
300g dry macaroni pasta*
2-2½ cups milk
½ cooked chicken, shredded
1 packet The Spice People Butter Chicken Blend
1 tbsp butter
60g baby spinach
1½ cups grated cheese*
Directions
Place pumpkin in a large saucepan. Cover with water and season with a pinch of salt.
Cover, bring to the boil and cook for 8-10 minutes until tender. Using a stick blender, blend the pumpkin and water to a puree.
Add milk, and The Spice People Butter Chicken spice blend and butter, mix well. Cook for 2 mins.
Add macaroni pasta to the puree and cook for 7 minutes, stirring.
Mix shredded chicken and baby spinach through the pasta sauce. Add shredded
cheese, stir to heat through.
*Notes:
feel free to use high-protein pasta in this recipe which will increase the
protein macro per serve by about 10g and add additional fibre. For cheese, we
used a blend of full fat mozzarella and cheddar.
