Indian Dahl Spiced Lentil Patties With Spiced Yoghurt

Ingredients

¾ cup red lentils

1 cup veg stock

1 shallot diced

2 garlic cloves

4 tbsp flour

1 egg

Coriander

2 tsp The Spice People Indian Dahl Spice

½ cup Greek yoghurt

15g butter

Fresh lime

Fresh mint

Directions

  1. Cook lentils in vegetable stock until soft and liquid is mostly absorbed. Allow to cool slightly.
  2. Meanwhile, sauté shallot and garlic in butter or oil until softened. Add lentils, shallot mixture, flour, egg, coriander and Dahl Spice to a bowl and combine. Add extra flour if needed.
  3. Shape into patties and cook in a pan over medium heat until golden on both sides.
  4. Melt butter and add a pinch of Dahl Spice. Tip the butter onto some Greek yoghurt and top with lime juice and chopped mint.
  5. Serve patties with spiced yoghurt, mint and lime wedges.
