Indian Dahl Spiced Lentil Patties With Spiced Yoghurt

Ingredients
¾ cup red lentils
1 cup veg stock
1 shallot diced
2 garlic cloves
4 tbsp flour
1 egg
Coriander
2 tsp The Spice People Indian Dahl Spice
½ cup Greek yoghurt
15g butter
Fresh lime
Fresh mint
Directions
- Cook lentils in vegetable stock until soft and liquid is mostly absorbed. Allow to cool slightly.
- Meanwhile, sauté shallot and garlic in butter or oil until softened. Add lentils, shallot mixture, flour, egg, coriander and Dahl Spice to a bowl and combine. Add extra flour if needed.
- Shape into patties and cook in a pan over medium heat until golden on both sides.
- Melt butter and add a pinch of Dahl Spice. Tip the butter onto some Greek yoghurt and top with lime juice and chopped mint.
- Serve patties with spiced yoghurt, mint and lime wedges.
