Quick Chicken Tacos

Ingredients
- 1 tbsp The Spice People’s Taco Seasoning
- 500g boneless chicken thighs, cut into 2cm cubes
- 12 mini flour tortillas
- 2 tomatoes, finely diced
- 1 red onion, finely diced
- 1 small bunch coriander, chopped
- 2 limes juiced
- pinch of salt
Directions
- Add your chicken pieces into a bag along with the taco seasoning, a generous pinch of salt, and the juice of one of the limes. Close the bag and toss until the chicken is nicely coated in the spice mix. Set aside.
- In a bowl, add your chopped tomatoes, onion, coriander, with the juice of the other lime and a pinch of salt, and stir to combine. Set aside for serving.
- Bring a pan to med-high heat. Add 1 tbspn olive oil and once hot, add your chicken pieces in and sauté until browned on the outside and cooked inside – about 4-5 mins. Cut one of the pieces open to ensure it’s opaque and cooked all the way through. Remove from the pan and set aside to rest. Place the pan back on the heat and warm your tortillas through on both sides one at a time.
- Serve your tortillas, chicken, and salsa at the table and enjoy!
