Preheat your oven and line a large baking tray with baking paper.

In a large bowl, combine the coconut oil, maple syrup, Thai Massaman spice blend, chilli flakes and sea salt flakes. Stir until smooth.

Add the cashews, peanuts and pumpkin seeds to the bowl. Toss well until everything is evenly coated.

Spread the nut mixture in a single layer on the prepared tray. Roast, tossing halfway through, until golden and fragrant.

Remove from the oven and allow to cool completely on the tray - they’ll crisp up as they cool. Serve on top of soups, salads or even yoghurt bowls for a savoury twist.
