Indian Lamb Rogan Josh is a highly spiced and fragrant meat curry which uses kashmiri chillies to give the rich red color, typical of these curries without extreme heat. This medium curry works well with lamb, chicken or goat.

Heat oil/ghee in a saucepan, add garlic, ginger & onion. Sauté 5min. Mix vinegar with Indian Lamb Rogan Josh spice mix, add to onions, Sauté further 5 min.
Add lamb, brown well on a high heat to caramelise flavour 5 min. Add enough water to thicken sauce.
Reduce heat and simmer for 1 -1.5 hrs. Adjust water as necessary to prevent drying out. Add yoghurt 5 min before serving. Garnish with coriander leaves and toasted almonds. Serve with naan or roti & rice.
