This refreshing morning pick-me-up is the perfect sweet hit to wake you up in the morning. By preparing this the night before, it means I can enjoy a healthy, sustaining and delicious breakfast even if I’m in a hurry. The sweetness of the Hibiscus Chai is enough for me to offset the tartness of the raspberries however, I often like to add a little drizzle of honey when serving along with some fresh raspberries and pepitas, but you can top with any fruit, seeds or nuts you like.
A refreshingly different way of using your chai mix and a very sweet (and healthy) way to start your day.

Method
- Steep the hibiscus chai in 1/2 cup of hot water for 2 mins before straining into a large bowl and allowing to cool slightly.
- Add all the ingredients, except the raspberries, to the tea and mix.
- Add the raspberries to a bowl or jug and cover with hot water. Leave for just 1 to 2 minutes before draining.
- Stir the raspberries through the rest of the ingredients, cover the bowl with foil or plastic wrap and refrigerate overnight or for a minimum of 3 hours
- Add extra honey for sweetness and top with your choice of fruit, seeds or nuts
