A favourite BBQ dish that’s as easy and fast to whip up as they are delicious – my Smoky-Chilli Chicken Skewers with Lemon Mayo. Our Smoked Salt & Chilli Seasoning does all the flavour heavy lifting here, and with just a few extra ingredients, you can have these on the table in no time! I like to use chicken thigh in this recipe as I think it stays a lot more tender and moist whilst being cooked on a high heat, but you can just as easily use breast, or use this same marinade on wings or drumsticks!
Served alongside this zesty lemon mayo to cut through the smoky, spicy, sweet marinade, this dish is a winner!

Method
- In a bowl, combine your honey, smoked salt seasoning, the juice of 1/2 lemon, and a good glug of olive oil. Add in your chicken pieces and toss to coat in the marinade – set aside for at least 10 mins. In the meantime, soak your bamboo skewers in water for 10 mins – this will prevent them from burning.
- When the chicken and skewers are ready to go, divide the chicken chunks between the 4 skewers and gently thread them on. Heat your BBQ or griddle pan to medium-high. Place the skewers on and cook until lightly charred on the outside and cooked and opaque inside – about 5 mins on each side. Set aside to rest.
- While the chicken rests, combine your mayo and remaining lemon juice on a small bowl and serve alongside your hot, rested skewers, and enjoy!
