There are as many variations as there are towns and no two are exactly alike. Our mixture has 14 different herbs and spices delicately balancing the sweet and savoury flavours to give it a complex and well-rounded flavour without being overly spicy.
Black Cardamom Pods impart a sweet earthiness and smoky undertones to recipes they are added to. Black cardamom has a distinctly more smoky, though not bitter, aroma, than green cardamom, with a coolness some consider similar to mint. This difference between the two varieties mean that black cardamom is not generally considered a suitable substitute for green cardamom, particularly in sweet dishes. Black cardamom pods can be 4 to 6 times the size of the small pods of the green cardamom. Black cardamom is most often used whole, whereas green cardamom is commonly used in both whole and ground varieties.

Chilli Chipotle Ground peppers are smoked, dried Jalapeño chillies. They appeared when the Aztecs used to add dried chilli to food as a preservation method. Chipotle flavouring is widely used throughout Mexico, the United States and more recently, in Australia. It can be used in soups, stews and casseroles. The ground form is easier to use but is not as strong as using the whole smoked chipotle chillies.
Also known as pimento, the Allspice Berry imparts flavours reminiscent of cinnamon, nutmeg & cloves with a hint of pepper. Allspice is a single small berry from the Jamaican bayberry tree. Greek Gyros is a traditional Greek dish made from slow cooked spiced meat served in flat bread with onion, tomato and lettuce. Ceylon Cinnamon Ground or ‘True Cinnamon’ is the variety used in medicinal and culinary purposes. It is a spice obtained from the inner bark of several tree species from the genus Cinnamomum. Aniseed Seeds Whole are a small oval-shaped seed which are native to the Mediterranean. They have a light brown colour and a sweet liquorice flavour that makes them great for sweet and savoury dishes alike. Aniseed seeds are not related to star anise which is native to China. Even though they have similar flavours, star anise is much stronger. Consequently, aniseed can be used as a substitute for star anise, and vice versa.
The Kashmiri Chilli is a variety of chilli known for its intense red colour and lower heat rating, making it ideal to use in tandoori, butter chicken and rogan josh curries. They are dried and finely ground before adding to curries, soups, stews or even as a finishing sprinkle for a spicy heat. It is widely used especially in Indian cuisine, but also Mexican, Asian and Italian dishes.
North African Chermula is an aromatic blend of spices from North Africa, particularly used in Moroccan, Algerian and Tunisian cuisines. Ethiopian Berbere is an African spice blend made up of roasted herbs and spices. It has a full flavour which is characterised by its spicy aroma. It is used in Ethiopia and Eritrean cuisines. It is particularly used in the Ethiopian dish Berbere Chicken or just added to any dish to add a spicy, fragrant touch as well as a stunning warm red hue.
Middle Eastern Za’atar is a delicious Middle Eastern spice blend made with sumac, thyme, oregano and sesame seeds. This mixture has a nutty and fresh flavour and aroma and is traditionally used to sprinkle over flat bread that has been brushed with olive oil and lightly toasted. In Australian cuisine, it works well as a Barbecue rub. There are many variations of Za’atar and it is widely used in the Middle East and Mediterranean in a similar way to how Mixed Herbs are used in European dishes.
Chilli Ancho means “wide chilli†in Spanish and it is actually a dried Poblano pepper. They are a large dark purple sweet chilli that form the backbone of staple Mexican dishes such as tamales & red chilli beans. Its texture is wrinkled and it is a mild chilli originally from Puebla, Mexico. It has a mild fruity flavour with undertones of plum, raisin, tobacco and a slight earthy bitterness. Barberries are an important ingredient in Iranian cookery, and you’re most likely to find them in a Persian or Moroccan restaurant. Tunisian Harissa is an integral ingredient in North African cuisine. It has an orangey-red and vibrant colour and scent. It is made from chillies, garlic, and various other spices. It is characterized by its grainy consistency and its slightly smokey flavour. It is a favourite used in African countries to add heat & flavour and is often used as a condiment by mixing a little olive oil and a dash of lemon juice.

Thyme leaves is a perennial herb from the mint family originally native to the southern Europe and Mediterranean regions, and a great ingredient for daily cooking. Its dried leaves are gray-green leaves, and it has an herbaceous, minty, light-lemon aroma and mint and lemon flavour. It can be added to soups, stews, clam chowder, stuffing, gumbos, heartier sauces, sausages, roast chicken or pork, and many vegetable dishes, or fish. Its mint-like flavour that pairs well in most dishes. Its characteristic astringency counteracts rich and fatty foods.
